Head Pizza Chef and Kitchen Manager

We are now looking to recruit a Head Pizza Chef and Kitchen Manager for our new pizza restaurant, taproom, and beer garden. This is an exciting opportunity to join the team on the ground floor, as Bearpaw River Brewing Company looks to expand operations and open a new restaurant and brewing facility this summer.


Overview of Responsibilities

The Head Pizza Chef and Kitchen Manager will work in the kitchen preparing and delivering our food offerings, while also managing all back-of-house (BOH) restaurant operations during opening, mid, and closing shifts, in conjunction with front-of-house (FOH) and Brewery staff. Key responsibilities include:

  • Manage and contribute to menu development and execution to ensure that our offerings always meet the exceptionally high standards of Bearpaw River Brewing Company

  • Coach BOH team members and lead by example during service, guaranteeing the quality of our food and beverages

  • Manage and contribute to all aspects of restaurant production, service flow, and customer experience.

The Head Pizza Chef and Kitchen Manager is also responsible for continually optimizing restaurant operations, food and beverage offerings, and customer service in collaboration with FOH and Brewery staff.


Essential Duties and Responsibilities

This is a varied role with different projects, responsibilities, and daily tasks, and we expect the employee to be flexible and have a “can do” attitude. Essential duties and responsibilities include but are not limited to the following:


Food preparation and delivery

  • Prepare and bake pizzas, along with other food offerings on our menu

  • Customize orders to customer specifications whenever possible

  • Implement and maintain strict food allergy-friendly protocols for food preparation and delivery supported by point-of-sale allergen alerts, communication between FOH and BOH staff, and other precautions  

  • Maintain a tree nut-free kitchen

  • Develop the set menu along with seasonal offerings and specials


Shift execution

  • Conduct duties related to opening, mid, and closing shifts

  • Manage daily operations including cleanliness, organization, revenue opportunities, and staffing

  • Exercise discretion and independent judgement in facilitating work-flow management

  • Identify critical information and make timely and accurate independent judgements in accordance with the principles and business practices of Bearpaw River Brewing Company


Customer relations management

  • Provide exceptional customer service, thereby setting the standard for all employees

  • Manage customer relations relating to food orders and restaurant experience

  • Resolve customer complaints promptly and professionally


Personnel Management

  • Monitor BOH staff performance and maintain accountability for performance on a shift basis, ensuring guest experiences meet the exceptionally high standards of Bearpaw River Brewing Company

  • Delegate duties and tasks to BOH staff to meet objectives and maximize resources

  • Monitor quality and service standards for BOH staff

  • Communicate company policy, standards, and procedures to BOH staff

  • Direct and manage BOH staff members to meet standards and objectives within company policies

  • Organize and adjust BOH staff rotations and schedules in accordance with available resources and labor regulations

  • Train, coach, and develop all BOH employees through ongoing feedback and the establishment of performance expectations


Operational Execution

  • Promote and practice compliance with fire, health, safety, and hygiene standards and regulations

  • Manage supply deliveries and inventory, and maintain records of invoices

  • Ensure adherence to inventory control procedures by monitoring and ordering supplies

  • Liaise with suppliers and sales representatives

  • Confirm the procurement of supplies on the best possible terms

  • Ensure all deliveries are checked in correctly and documentation is correct

  • Check inventory is correctly rotated and stored to reduce waste

  • Ensure safety and sanitation

  • Ensure restaurant and bar is in complete compliance with all local, State, and Federal regulations

  • Accurately execute Bearpaw River Brewing Company initiatives and policies with improvement to quality, service, and operations


Business Management

  • Plan and implement systems to maximize sales and revenue

  • Implement improvements for products and service

  • Collaborate with FOH and Brewery staff on promotional activities and social media marketing

  • Maintain regular communication with staff and management through meetings, discussions, and electronic messaging

  • Stay current with relevant legislation regarding licencing and the service of food and alcohol

Essential physical requirements

  • Must be able to walk and stand for entire shift

  • Must be able to continuously reach, bend, and stretch

  • Must be able to lift and carry up to 50 lbs


Education and Certifications

  • Bachelor’s degree preferred

  • Current TAPs and Food Handler Certifications required

  • Diploma from a culinary school is an advantage



  • At least one year of experience in a high-volume casual/upscale restaurant is preferred but not required

  • Experience in a supervisory or management role is preferred but not required

  • Experience as a Pizza Chef or similar role in a restaurant is preferred but not required


Position type and start date
This is a full-time salaried position. We are looking to appoint for a start date in June 2021.
